There’s a lot to celebrate in March: the official start of spring (even if the weather makes it feel unofficial), Mardi Gras and Women’s History Month.

Every year since 1987, March is when we celebrate the many contributions women have made to history. That goes for food and beverage industry, too. Women have historically been responsible for feeding the world, and by all accounts (honors, awards, management and professional advancement) the future of food is female.

Turn up the Heat: Founded in 1989 by Tracy Hayward, The Perfect Purée of Napa Valley has been led by women for more than 30 years and continues to promote the accomplishments of female chefs and bartenders.

Jules Aron, author of “Zen and Tonic” and founder of The Healthy Bartender in Miami, makes a Chipotle Negroni with The Perfect Purée Chipotle Sour, which was recently named one of the hottest new products at the Winter Fancy Food Show. Made with a smoky blend of chipotle, mesquite and citrus flavors, the signature blend adds a complex spiciness to cocktails that’s especially attractive to millennials.

Celebrate spring and ‘Bridgerton’: Dr. Nicola Nice, founder and CEO of Pomp & Whimsy, said, “It’s no secret that the English have always loved champagne. ... However, far from popping the cork on birthdays and big occasions alone, Regency hostesses, like those featured on ‘Bridgerton,’ served champagne with almost every grand dinner and oftentimes in between. Of course, tastes were sweeter back then and a spoonful of sugar helped a prudent hostess to cover the imperfections of a lesser vintage. Indeed, mixing champagne into a cup with lemon, sugar and gin was a popular recipe of the time, immortalized many years later by urban cocktail bars in the form of the French 75 cocktail.”

• 1 ounce Pomp & Whimsy Gin Liqueur

Method: Add the first four ingredients to a cocktail shaker with ice and shake briefly to chill. Strain into a champagne flute and top off with champagne. Garnish with a sprinkling of dried lavender buds or a fresh lavender sprig

Stand up and be heard: Tiffanie Barriere, an Atlanta influencer, educator and spirits historian known as The Drinking Coach, is the bartender’s bartender — a bar star who has been awarded some of the beverage industry’s highest honors. She has been named one of the Tastemakers of the South and one of the five top Black female bartenders influencing America’s drink scene by the Tales of the Cocktail Foundation. She is currently working on her first book, an examination of pre-Prohibition Era cocktails Black people served and drank. Barriere’s deep dive into the little-known drinks culture of enslaved and underrepresented people is adding a new dimension to Black history. She uses The Perfect Purée Lychee to make a beverage statement with her drink, Loud and Proud.

Move over rom-coms and bring on the wine: Cameron Diaz has switched gears to health and wellness, launching Avaline, a clean wine brand she created with successful entrepreneur Katherine Power (Who What Wear, Versed Skincare, Merit). • I orange, juiced (about 1.5 ounce)

• 1 orange cut into half wheels (for garnish)

Method: Peel the orange and lemon, then juice an orange. Set aside. Combine spices in a large saucepan and toast over medium heat for 2-3 minutes. Add the rest of the ingredients to the pan and let them sit until they starts to steam (about 30 seconds). Reduce heat to low and simmer for 15 minutes. Strain and serve in a mug. Use heat-resistant glass to let the rich color shine through. Garnish with an orange wheel.

Bronya Shillo, founder and CEO of Fishers Island Lemonade, canned her family recipe that had been served for decades at The Pequot Inn on Fishers Island, New York, where Shillo used to bartend when her family owned the property.

• 4 oz. Sparkling Wine (Champagne or Prosecco)

• Garnish: fresh fruit (lemon or strawberry)

Method: Pour sparkling wine in a glass and top with Fishers Island Lemonade.

• ½ ounce sage syrup (gently boil sage in water for 15 minutes then add equal parts sugar to the mixture. Let sit to cool.)

Method: Combine all ingredients except for the soda water and prosecco in a shaker. Shake and strain into a flute. Top with a splash of soda water and 2 ounces of Vera Wang PARTY Prosecco. Finish with a fresh piece of sage.
